Cinnamon Vanilla Protein Bites

Coaching basketball I always need to be ready with a quick snack for the team. Quick does not mean unhealthy. Luckily I found Cotter Crunch  who has some great healthy eating options, quick and easy! The team loved them… adored them actually.

I took her recipe and adapted it just a little.

RECIPE:

  • 2 1/2 cups oats
  • 3/4 cup almond butter
  • 3/4 cup maple syrup (or honey)
  • 1/4 cup cinnamon
  • 1 tsp salt
  • 1/2 cup dates
  • 1 tsp vanilla

Directions: Take dates and soak them in warm water for about 1/2 hour. (Sometimes I speed up this process and just throw the dates in some really hot water for 5 minutes.) Put them in a food processor or blender and blend them until smooth. (If you use a blender they don’t have to be completely smooth, just chopped.) Melt almond butter in a microwave safe dish. Add cinnamon, salt, maple syrup/honey, vanilla & processed dates. Stir in oats. Mix together and form into small balls. Place on parchment paper/wax paper and refrigerate to store!
